GERMAN PANCAKE

This is like a flat souffle or a giant Yorkshire pudding, for those unfamiliar with pfannkuchen. It is a single meal for one or could be shared with a side of some other meat. Caution: putting vegetables anywhere near this would take away its authenticity.

3 eggs
1/2 c. flour
1/2 c. milk
2 tbsp. butter, melted
1/2 tsp. salt

 

Beat eggs and add remaining ingredients. Bake in a 9-inch pie pan at 450 degrees for 20 minutes. Options – as Heather had it in Shwangau, by adding strips of bacon and pepper on top before baking. Or sweet – sprinkle with powdered sugar and serve with butter.
